Oven-baked pancakes

This is based on this recipe that I found after a few months trying to replicate some pancakes I had in Colombia. This version has a few “improvements”. You can also add nuts if that is your thing.

I prefer to top it with bananas and good maple syrup, but Nutella works too if maple syrup is hard to find.

Makes about ten 3" pancakes.

Ingredients

  • 1 cup (120g) all-purpose flour
  • 2 teaspoons (8g) baking powder
  • 2 tablespoons sugar (32g)
  • ½ teaspoon salt (2g)
  • 1 large egg (50g)
  • ½ cup milk (123g)
  • 1 teaspoon vanilla extract (4g)
  • 2 tablespoons butter, melted and slightly cooled for the mix (20g)
  • 2 tablespoon of melted butter, for brushing the pancakes (20g)
  • [optional] Semi-sweet or dark chocolate (1/2 cup approximately) (72–80g)

Instructions

  1. Preheat your oven to 425 F (220 C).
  2. Line a baking sheet with parchment paper
  3. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  4. In a separate medium bowl, combine the egg and milk, and whisk vigorously to combine.
  5. Stir in the vanilla and melted butter, and whisk briefly to incorporate.
  6. Pour the milk mixture into the flour mixture.
  7. If adding chocolate add it now. I prefer a bar of good quality chocolate that I cut with a knife which results in a mix of chunks and shavings.
  8. Using a wooden spoon, stir until just combined and there are no flour streaks (lumps/bumps are totally OK). The batter will be fairly thick.
  9. For each pancake, spoon about 2 tablespoons of batter on to the baking sheet.
  10. Place the baking sheets in the preheated oven.
  11. Bake for about 3 minutes, then remove the pans from the oven and use a spatula to carefully flip each pancake. They won’t be done yet, but this will ensure that they cook evenly on both sides.
  12. Brush some of the melted butter on the top side which should be somewhat cooked.
  13. Return to the oven and bake for 3 more minutes.
  14. Take out and brush some butter on the other side.
  15. If needed, return to the oven until browned to your desired level. Since these pancakes are baked, they will look a little bit different than what you’d usually see just out of the pan. Feel free to add a bit more brushed butter. when ready (optional, but recommended).
  16. Serve warm, with whatever pancake fixings you prefer! Please don’t do the whole we’ll wait for others if you have to do more than one batch. They are 10 times better right out of the oven.
